Vegan Roasted Sweet Potato Cheese Dip: A Savory and Spicy Dip for Any Occasion



I made this, and we loved them! New staple in my skimpy recipe box! But, there was a bit of cheese sauce leftover, probably enough for 2 more potatoes... I'm not creative enough, but can you suggest another meal/food this sauce would go with? I'd love to double it next time and have enough sauce for a different meal. Suggestions?

There are few nights when I come home after a long day and don't want to dive head first into a giant bowl of mac and cheese. And while avocado mac can satisfy this craving, I wanted to create a vegan mac and cheese recipe that was closer in appearance to a classic mac and cheese that would also be suitable for my friends with all kinds of dietary restrictions. This sweet potato mac tastes shockingly similar to the classic mac 'n cheese I used to love before going vegan. Being the sweet potato and tahini enthusiast that I am, why wouldn't I combine two of my favorite ingredients to create an irresistible cheese sauce?!

You can pierce 1-2 sweet potatoes with a fork and roast them for about an hour at the same temperature. The quicker way is to boil the sweet potatoes. Peel and dice them, then bring a pot of water to boil. Place potatoes in and simmer, covered for 15 mins, or until fork-tender.


I love this! It came out so good. I used Banza chickpea shells. My roommate thought the tahini flavor was too intense but I thought it was very well rounded. It's not giving me cheese vibes, it's definitely it's own thing. Savory, sweet, garlic-y, yum. Will be making it again ?

I didn't have macaroni on hand, so I made this with penne pasta. I loved the combination of roasted sweet potato and garlic! The sauce was rich and creamy, and came together quickly and easily. This was a winner!

This recipe hinges on creating a delicious, oil-free vegan cheese sauce. While a traditional mac and cheese will use dairy cheese, I wanted this to be 100% plant-based. Therefor, I used roasted sweet potatoes as the base for my creamy sauce. Then, I added roasted cashews and nutritional yeast for extra richness and umami flavor. A dash of garlic powder adds another layer of flavor.


Nutritional Yeast: Nutritional Yeast adds cheesy, umami flavor to many vegan recipes. Use it sauces, soups, stews, dressing, mashed potatoes, and stuffed sweet potatoes. Besides great flavor, it has healthy protein and essential vitamins like B-12.
